The word dosai is grammatically the Tamil plural of dosa, but English writers borrowed it loosely as a countable noun in its own right, so a menu may offer either a dosa or a dosai for the same single pancake without any change in meaning. Cooks spread the batter thin across a hot griddle so the finished dosai comes out lacy and crisp at the edges rather than soft like an ordinary pancake.
