The crude potassium bitartrate that forms as a hard crust on the inside of wine casks during fermentation.
As grape juice ferments into wine, dissolved tartar becomes less soluble in the increasingly alcoholic liquid and settles onto the inside of the cask, forming the reddish or grayish crust called argol. Winemakers used to scrape this crust out of old casks and sell it onward, since refining argol yields cream of tartar, the ingredient used in baking and in silver polish. The spelling argal sometimes stands for the very same crust, though argal appears far more often today in its unrelated sense meaning therefore. Chemically, argol consists mostly of potassium bitartrate mixed with smaller amounts of calcium tartrate and other residue left over from the wine.
