A Hawaiian soup of wheat noodles in a light broth, usually topped with sliced meat, egg or fish cake.
Saimin grew out of the mix of Chinese, Japanese and Filipino cooking brought to the Hawaiian plantations in the nineteenth and twentieth centuries. It is a modest street and diner food, found in local snack shops and even on some fast-food menus on the islands. The broth is lighter than that of Japanese ramen, and the toppings change from one stand to the next. The word is of Chinese origin, although the dish itself is a Hawaiian invention.
