Distillers separate it out because it tastes harsh and can leave an unpleasant smell in the finished spirit if too much remains. Traditional pot-still distilling removes most of it through careful cuts, discarding the early and late fractions of the run where it concentrates. The term reached English from German, where it once described a rough or inferior drink.
